Complex carbohydrates known as polysaccharides such as whole grains, vegetables, and legumes take longer for the body to break down and convert to glucose. Glucose, a monosaccharide, is the energy our body uses. While every aspect of our body requires glucose, a complex carbohydrate is best because it takes longer to break down, thereby minimizing the sugar rush and potential for adult onset diabetes. A complex carbohydrate, such as an apple, also requires our body to use energy to break it down and that helps enhance our metabolism, that is to say burn calories. So why not eat simple carbohydrates like candy? It seems like faster would be better, right? It is not even a debate, slow and steady does it.
